Did you know that artisan sorbetti made in the Italian style are smooth and almost creamy, though they contain no milk or cream?
The reason for this is that they are churned steadily as they freeze: the resulting ice crystals are very, very small, hence the warmer mouth-feel. Quite apart from reducing 'brain-freeze', this allows your tastebuds to operate fully, so you get a much more satisfactory taste sensation!
